The Tiramisu I Make When Mascarpone Isn’t in the Fridge.Tiramisu has a way of looking like you’ve spent a very serious afternoon making dessert.

In reality, most of the work here is whipping cream, dipping ladyfingers in coffee, and trying not to eat the filling straight from the bowl.

This version is a little different from traditional Italian tiramisù because I use cream cheese instead of mascarpone. The official-style Italian preparation uses mascarpone with egg yolks, sugar, coffee-soaked savoiardi, and cocoa, so I like calling this specifically cream cheese tiramisu rather than pretending it is the traditional formula. The Accademia Italiana della Cucina’s tiramisù preparation uses mascarpone in the classic cream.

How to Make Cream Cheese Tiramisu

  • Whisk yolks + sugar. In a heat proof bowl, whisk the egg yolks and sugar to combine.

  • Heat and thicken. Set bowl over a pan of barely simmering water (double boiler). Whisk constantly until it is pale, a bit thick and warm to the touch. Remove from heat.

  • Add cream cheese + vanilla. Add cream cheese and vanilla extract, and beat until smooth and creamy.

  • Whip the cream. In another bowl, beat the whipping cream until thick and soft to medium peaks.

  • Fold to lighten. Fold in the whipped cream into the cream cheese mixture until light and well combined.

  • Make the coffee dip. Dissolve the instant coffee in water and mix well. Let it cool slightly.

  • Layer. Dip each ladyfinger quickly in coffee (about 1–2 seconds) and layer them in your dish. Drape a layer of cream on top. Top with a second layer of dipped ladyfingers and cream.

  • Smooth the top. Top with another layer of cream and smooth over.

There are three textures doing all the work here.

The ladyfingers soften just enough after their quick coffee dip. The cream cheese filling stays light because whipped cream gets gently folded into it. Then unsweetened cocoa adds a slightly bitter finish that balances the sweet cream underneath.

One important distinction: this is no-bake, meaning there is no oven involved, but it isn’t completely no-cook because the egg-yolk mixture is gently heated for safety and texture.
