What Makes Chocolate Chip Cookies Chewy?

For this recipe, there isn’t one single secret.

The chewy texture comes from the combination of more brown sugar than white sugar, melted butter, the measured flour ratio, and removing the cookies before the centers become dry and firm.

Common Mistakes to Avoid

Adding extra flour because the dough feels soft. Use your tested 320 g flour. If the dough is unusually soft, your current recipe already recommends chilling it for 20–30 minutes instead.

Mixing in the eggs while the butter is extremely hot. Let the melted butter cool slightly.

Overmixing after adding flour. Mix only until the dry ingredients disappear into the dough.

Baking until the center looks completely firm. That can take the cookies past the soft-and-chewy stage.

Ignoring the cookie edges. The edges are a better doneness cue: they should look set while the middle remains soft.
