This lasagna meat sauce recipe is my special version of homemade lasagna—so easy, cheesy, and seriously tasty. It layers a rich ground beef tomato sauce with silky homemade béchamel, tender lasagna sheets, and plenty of melted mozzarella.

The creamy white sauce is what makes this version extra comforting. If you love hearty dinners, try my Spaghetti and Meatballs next. Serve this lasagna with Tomato Cucumber Salad on the side, pour a cold Cucumber Lemonade with dinner, or make my Creamy Tomato Soup for another cozy tomato-based recipe.
Every layer has plenty of meat sauce and cheese, so the finished lasagna stays moist instead of dry. Let it rest for a few minutes after baking and you will get thick, cheesy slices that hold together beautifully.

What You Need

How to Make the Meat Sauce
- Cook the Onion
Heat the olive oil in a large skillet over medium heat.
Add the finely chopped onion.
Cook until softened and translucent.
- Brown the Ground Beef
Add the ground beef.
Break it into smaller pieces with a wooden spoon or spatula.
Cook until browned.
- Season
Add the dried thyme, oregano, chili flakes, salt, and black pepper.
Stir until the seasonings are evenly distributed through the beef.
USDA recommends cooking ground beef to a safe internal temperature of 160°F (71°C).
- Add the Tomato Sauce
Pour in the tomato sauce.
Stir everything together.
Let the sauce simmer over medium-low heat until slightly thickened and the flavors come together.
Taste and adjust the salt and pepper if needed.

How to Make Béchamel Sauce
- Melt the Butter
Add the butter to a saucepan over medium-low heat.
Let it melt completely.
- Add the Flour
Whisk in the all-purpose flour.
Cook briefly while whisking to create a smooth roux.
Do not let it brown too much.
- Add the Milk
Slowly pour in the milk while whisking continuously.
Adding it gradually helps prevent lumps.
- Add the Cream
Pour in the heavy cream.
Continue whisking until the sauce becomes smooth and creamy.
- Season
Add salt and freshly ground black pepper to taste.
Continue cooking gently until the sauce thickens enough to coat the back of a spoon.
Remove from the heat.

How to Layer Lasagna
Preheat the oven to 375°F (190°C).
- First Layer
Spread some meat sauce over the bottom of your baking dish.
Spoon over some béchamel.
Sprinkle with mozzarella.
Add a layer of lasagna sheets.
- Repeat the Layers
Continue layering:
Meat sauce → Béchamel → Mozzarella → Lasagna sheets
Repeat until the ingredients are used.
- Finish the Top
Finish with béchamel sauce and a generous layer of shredded mozzarella.
Make sure the top layer has enough sauce so the pasta does not dry out.
- Bake
Bake at 375°F (190°C) for about 35–40 minutes, or until the sauce is bubbling and the cheese is melted and lightly golden.

- Rest Before Cutting
Remove the lasagna from the oven.
Let it rest for about 15 minutes before cutting.
This is important.
Cutting it immediately can cause the layers to slide apart.
Once rested, slice into squares and serve warm.

How to Keep Lasagna from Getting Watery
A good lasagna should be saucy but still hold its shape when sliced.
Let the meat sauce simmer until it thickens slightly instead of assembling the lasagna with a very watery sauce.
The béchamel should also be creamy and thick enough to coat the back of a spoon.
If using fresh mozzarella with a high moisture content, drain it well before adding it.
Most importantly, let the baked lasagna rest for about 15 minutes before slicing. The sauces thicken slightly as the lasagna rests, which helps the layers stay together.
Béchamel vs. Ricotta in Lasagna
Many American-style lasagna recipes use ricotta, but this version uses homemade béchamel.
Béchamel is a smooth white sauce made from butter, flour, milk, and cream. It spreads easily between the pasta layers and gives the lasagna a creamy texture without making the filling feel heavy or grainy.
The heavy cream in my version makes the sauce especially rich.
If you prefer ricotta-style lasagna, you can use it, but the finished texture and flavor will be different from this recipe.

What to Serve with Lasagna
Lasagna is rich and filling, so lighter sides work especially well.
A crisp green salad, tomato cucumber salad, roasted vegetables, or garlic bread all pair nicely with it.
For a larger dinner, serve smaller portions of lasagna with a fresh salad and warm bread.
The acidity from a simple salad or tomato-based side also balances the creamy béchamel and melted cheese.
