What Is Lime Curd?

Lime curd is a rich citrus spread made by gently cooking lime juice, lime zest, egg yolks, sugar, and butter until the mixture thickens.

The texture should be smooth and creamy rather than runny or pudding-thick. Once cooled, it becomes thicker and works well as a spread, tart filling, cake filling, or topping for baked desserts.

Let’s Make Lime Curd

  • Rub the Lime Zest Into the Sugar

Add the 3 tablespoons sugar and 1 tablespoon lime zest to a small bowl.

Use your fingertips to rub the zest into the sugar for about 30 seconds, until the sugar looks slightly moist and smells strongly of fresh lime.

This small step brings much more lime aroma into the finished curd.

  • Combine the Lime Curd Ingredients

Transfer the lime sugar to a small saucepan.

Add the 1/4 cup lime juice, 3 egg yolks, 50 g unsalted butter, and a pinch of salt.

Whisk everything together before placing the pan over the heat.

  • Cook Until Thick

Place the saucepan over low to medium-low heat.

Cook for about 7–10 minutes, stirring or whisking constantly and scraping along the bottom and edges of the pan.

The butter will melt first, then the mixture will gradually become smoother and thicker.

Keep the heat gentle. You don’t want the curd to boil aggressively because excessive heat can scramble the egg yolks.

The curd is ready when it looks glossy and thick enough to coat the back of a spoon.

Remove the saucepan from the heat.

Immediately pour the warm lime curd through a fine-mesh sieve into a clean bowl.

  • Cool Until Thick

Let the lime curd cool for about 15 minutes, then cover and chill for approximately 2 hours.

It will continue thickening as it cools.

How to Know When Lime Curd Is Thick Enough

Hot lime curd should not look as thick as the final chilled curd.

While it is still in the saucepan, look for a texture that coats the back of a spoon rather than immediately running off.

Drag your finger through the curd on the spoon. If the line remains visible instead of immediately filling back in, the mixture has thickened considerably.

Don’t keep cooking simply because you want it to look refrigerator-thick in the saucepan. The butter and egg yolks help the curd firm up considerably as it cools.

Common Mistakes to Avoid

Using high heat: Gentle heat gives the egg yolks time to thicken without scrambling.

Stopping too early: Thin curd usually needs a little more gentle cooking.

Cooking too long: Once the curd coats a spoon, remove it from the heat rather than continuing until extremely thick.

Not stirring continuously: The mixture can cook faster on the bottom and edges of the saucepan.

Skipping the zest: The zest adds much more lime aroma than juice alone.

Including white lime pith: Zest only the outer green layer.

Judging the texture while hot: Lime curd becomes noticeably thicker once chilled.
