Lime Curd

Smooth homemade lime curd made with fresh lime juice and zest, egg yolks, sugar, butter, and a pinch of salt. Bright, buttery, and creamy with plenty of fresh citrus flavor.

Ingredients
  

  • 3 tablespoons caster sugar or granulated sugar
  • 1 tablespoon finely grated lime zest
  • 1/4 cup 60 ml fresh lime juice
  • 3 large egg yolks
  • 3 1/2 tablespoons 50 g unsalted butter, cut into small cubes
  • Pinch of salt

  • Small saucepan
  • Small mixing bowl
  • Whisk
  • Wooden spoon or silicone spatula
  • Fine-mesh sieve
  • Clean bowl
  • Citrus zester
  • Measuring cups and spoons

Method
 

  1. Add the sugar and lime zest to a small bowl. Rub them together with your fingertips for about 30 seconds, until fragrant.
  2. Transfer the lime sugar to a small saucepan.
  3. Add the lime juice, egg yolks, butter, and salt. Whisk to combine.
  4. Place the saucepan over low to medium-low heat.
  5. Cook for about 7–10 minutes, whisking or stirring constantly and scraping the bottom and sides of the saucepan.
  6. Continue cooking until the curd is smooth, glossy, and thick enough to coat the back of a spoon.
  7. Remove the saucepan from the heat immediately.
  8. Pour the warm lime curd through a fine-mesh sieve into a clean bowl.
  9. Let the curd cool for about 15 minutes.
  10. Cover and refrigerate for approximately 2 hours, or until fully chilled and thickened.
  11. Stir gently before serving.
