These Apple Turnovers with Puff Pastry are filled with warm cinnamon apples and baked until tall, flaky, and deeply golden. Using ready-made puff pastry makes them surprisingly easy, while a quick stovetop apple filling gives them that glossy bakery-style center.

Homemade apple turnovers with cinnamon apple filling and powdered sugar

There is something about a warm apple turnover that makes it look like you spent considerably more time baking than you actually did.

The outside is all crisp, buttery layers, while the middle is soft and glossy with cinnamon-sugar apples. And because this recipe starts with ready-made puff pastry, most of the complicated pastry work has already been handled for you.

Granny Smith apples give these easy apple turnovers enough tartness to balance the sweet filling, while cornstarch thickens the juices so they stay inside the pastry instead of soaking through the bottom.

The small step that makes the biggest difference here is chilling the assembled turnovers before baking. Puff pastry depends on distinct layers of dough and fat; keeping those layers cool helps preserve the structure that produces a flaky rise in the oven. King Arthur Baking explains why temperature matters in pastry.

How to Make Apple Turnovers

  • Prep the apples
Peel, core to small dice apples – approx 1/2 inch cubes. Smaller pieces cook through consistently and fit better in the pastry.

  • Cook the filling
Place diced apples in a frying pan over medium heat. Add the sugar, cinnamon and a pinch of salt. Cook, stirring occasionally, until apples soften and give off their juices.
  • Thicken and cool
Add cornstarch and combine thoroughly. Cook until the liquid is glossy and just thickened. Take off the heat and let the filling cool to room temperature so that it doesn’t melt the pastry.

Common Mistakes To Avoid

  • Using warm puff pastry, which can become sticky and hard to fold.
  • Adding too much apple filling, which can leak out while baking.
  • Not cooking the apple filling long enough if the apples release too much liquid.
  • Skipping the egg wash, which gives the turnovers a golden, bakery-style finish.
  • Not sealing the edges well with a fork.
  • Cutting the vent holes too small or forgetting them completely.
  • Baking at a low temperature, which can stop the puff pastry from rising and turning crisp.

What to Serve With Apple Turnovers

These homemade apple turnovers are delicious by themselves, but they’re even better served slightly warm with:

  • Vanilla ice cream
  • Whipped cream
  • Hot coffee
  • Tea
  • Vanilla latte
  • Hot chocolate
  • Fresh berries
  • Caramel sauce

For the ultimate caramel-apple version, drizzle each warm turnover with Homemade Salted Caramel Sauce. The sauce is already part of your dessert cluster and specifically works well with apples and ice cream.
