Cucumbers are usually the calmest vegetable in the refrigerator. Add chili crisp, soy sauce, and sesame oil, and suddenly they have a personality.

This spicy Asian cucumber salad is crunchy, saucy, salty, nutty, and hot in that very specific way that makes you take another bite immediately—partly because it tastes good and partly because the cool cucumber is helping you recover from the previous bite.

The cucumbers are lightly smashed before being cut into chunky pieces. That gives them rough edges and little cracks that catch the chili crisp dressing much better than perfectly smooth slices. Thin red onion adds sharpness, green onion keeps everything fresh, and sesame seeds give every forkful a little extra crunch.

I especially like this salad beside grilled chicken, salmon, shrimp, rice bowls, noodles, dumplings, or any dinner that needs something cold and crunchy on the side.

And yes, there will probably be red chili oil left at the bottom of the bowl. That is not a problem. That is where the good decisions live.

Welcome to My Kitchen! Let’s Make Spicy Asian Cucumber Salad

  • Smash the Cucumbers

Place each cucumber on a sturdy cutting board.

Press or gently hit it with the flat side of a large knife, a rolling pin, or the bottom of a heavy cup until the cucumber begins to split. You are not trying to turn it into cucumber confetti. A few cracks and broken sections are exactly what we need.

Cut the smashed cucumbers into chunky bite-size pieces.

Smashing creates irregular surfaces that hold onto the dressing more easily than smooth cucumber slices.

  • Drain the Extra Cucumber Liquid

Transfer the cucumber pieces to a bowl or colander and let them sit for about 10 minutes.

Pour away any liquid that collects at the bottom. This keeps the final chili crisp dressing flavorful instead of watery.

Smash and cut the cucumbers, then drain the excess liquid.
  • Add the Onion and Sesame Dressing

Place the drained cucumbers in a large mixing bowl.

Add the thinly sliced red onion, green onions, toasted sesame seeds, crispy chili oil, soy sauce, and toasted sesame oil.

  • Toss Gently

Toss until the cucumber pieces and onions are evenly coated.

Make sure to scoop from the bottom of the bowl so the crunchy chili pieces do not stay behind while the cucumbers leave the party without them.

Add the onions, sesame seeds, chili crisp, soy sauce, and sesame oil, then toss.
  • Let It Rest

Let the salad rest for 5 to 10 minutes before serving.

This gives the cucumbers time to absorb some of the savory chili and sesame flavor while still staying crunchy.

  • Serve

Taste before adding any extra seasoning. Soy sauce and chili crisp can already contain plenty of salt.

Serve immediately or chill it briefly in the refrigerator.

Can I Use Plain Chili Oil Instead of Chili Crisp

Yes, but the final salad will have less texture.

Chili crisp adds both heat and crunchy bits, while plain chili oil mostly adds spice and oil. When using plain chili oil, add toasted sesame seeds, fried garlic, or crushed red pepper for extra crunch.

Is This a Korean Cucumber Salad

No. This is a broad Asian-inspired cucumber salad made with chili crisp, soy sauce, and sesame oil.

It should not be described as an authentic Korean cucumber salad because it does not use a specifically Korean seasoning combination such as gochugaru.

Common Mistakes To Avoid

  • Skipping the salting step, which can make the salad watery.
  • Not draining the cucumbers well before adding the dressing.
  • Cutting the cucumber pieces too small, so they lose their crunch.
  • Adding too much soy sauce, which can make the salad too salty.
  • Using too much chili oil or red pepper flakes before tasting.
  • Mixing the salad too early before serving.
  • Leaving it too long after dressing, which can soften the cucumbers.

FAQ For The Spicy Asian Cucumber Salad
