Easy Strawberry Banana Baked Oatmeal

A cozy baked oatmeal made with rolled oats, ripe banana, strawberries, maple syrup, and chocolate chips. It is easy to prep, great for breakfast meal prep, and delicious served warm with milk.

Ingredients
  

  • Dry ingredients
  • 2 cups rolled old-fashioned oats
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon sea salt
  • Wet ingredients
  • 2 cups non-dairy milk of choice
  • 1/4 cup pure maple syrup
  • 1 large egg or 1 tablespoon ground flaxseed
  • 2 tablespoons coconut oil melted
  • 2 teaspoons vanilla
  • 2 ripe bananas 1 mashed and 1 sliced
  • Fruit and mix-ins
  • 1 1/2 cups fresh quartered strawberries divided
  • 1/4 cup chocolate chips divided
  • cooking spray
  • additional strawberries bananas and milk for serving

Equipment

  • Large mixing bowl
  • Measuring cups and spoons
  • Rubber spatula or spoon
  • 8-inch square baking dish
  • Oven

Method
 

  1. Preheat the oven to 375°F and lightly coat an 8-inch square baking dish with cooking spray.
  2. In a large bowl, stir together the rolled oats, baking powder, cinnamon, and sea salt.
  3. Add the non-dairy milk, maple syrup, egg, melted coconut oil, vanilla, and the mashed banana. Stir until combined.
  4. Fold in most of the quartered strawberries and part of the chocolate chips.
  5. Pour the mixture into the prepared baking dish and spread it evenly.
  6. Top with the sliced banana, remaining strawberries, and remaining chocolate chips.
  7. Bake for 35 to 40 minutes, until the center is set and the top is lightly golden.
  8. Rest for 5 to 10 minutes before serving. Serve warm with extra strawberries, bananas, and milk if desired.
