Gluten-Free Pistachio Cake

This Gluten-Free Pistachio Cake is light, tender, and packed with real pistachio flavor. Ground pistachios replace wheat flour, while whipped egg whites give the cake enough lift to keep the center airy instead of heavy.

Fresh lemon zest and vanilla brighten the nutty flavor, and a layer of chopped pistachios over the top adds a little crunch to every slice. Light, Nutty, and Much Easier Than It Looks

This is one of those cakes that feels special enough for a dessert table but doesn’t require frosting, layers, or a long ingredient list.

The pistachios do most of the flavor work.

They’re ground finely and folded into a simple egg-yolk batter, then whipped egg whites are gently incorporated to give the cake its lighter texture. Once baked, the center stays moist and tender while the chopped pistachios on top add a little contrast.

If you like nut-based cakes, my Flourless Almond Cake uses a similar whipped-egg-white technique with almonds. My Italian Almond Cake is a little richer and gets fresh orange zest in the batter.

For something brighter, try my Easy Lemon Cake, or serve a slice of this pistachio cake with a mug of Homemade Hot Chocolate.

What Should Pistachio Cake Batter Look Like?

  • Before the egg whites go in, the pistachio batter will be fairly thick.
  • Don’t add extra oil or liquid just because it doesn’t resemble ordinary wheat-flour cake batter.
  • The whipped egg whites will loosen and lighten it.

What to Serve With Pistachio Cake

This cake is flavorful enough to serve plain, but a few simple additions work especially well.

Fresh berries: Strawberries, raspberries, and blueberries add acidity and color without covering the pistachio flavor.

Lightly whipped cream: A soft spoonful of cream works especially well if you’re serving the cake for dessert. King Arthur’s homemade whipped cream recipe is a useful reference if you want to make it from scratch.

Lemon curd: Pistachio and lemon already work together in the cake, so a little tart lemon curd on the side makes sense without changing the cake itself. Try King Arthur Baking’s Lemon Curd.

Greek yogurt: A spoonful of plain or lightly sweetened Greek yogurt gives you a less-rich alternative to whipped cream.

Coffee or tea: The nutty crumb makes this especially good as an afternoon coffee cake.

FAQs

Can I make this without separating the eggs?

Separating gives the cake its light texture. If you skip it, the cake will be noticeably denser.

How do I grind pistachios without making pistachio butter?

Pulse in short bursts and stop as soon as the nuts look finely ground. If it starts clumping, you’re close to over-processing.

How do I know when it’s done?

The top should look set, and a toothpick in the center should come out mostly clean with a few moist crumbs.

Why did my cake sink?

This can happen if the whites were over-folded (air knocked out) or the cake was underbaked. Also avoid opening the oven early.
