These Dark Chocolate Truffles have a smooth, creamy ganache center made with dark chocolate, heavy cream, and butter, then rolled in cocoa powder or coconut. They’re rich, no-bake, easy to make ahead, and look like a much fancier dessert than the amount of work involved

The Little Chocolate Dessert That Looks Much Fancier Than It Is.Chocolate truffles have a way of looking like something you bought from a tiny chocolate shop with very serious packaging.

But the center is wonderfully simple.

Dark chocolate, cream, butter.

Melt everything gently, stir until glossy, let the ganache get firm in the refrigerator, then scoop and roll.

That’s basically the entire situation.

I like making half of mine with cocoa powder for that classic dark chocolate finish and rolling the other half in coconut. The coconut version is a little sweeter and more textured, while the cocoa ones stay intense and deeply chocolatey.

How to Make Dark Chocolate Truffles

  • Combine the base ingredients. Combine dark chocolate, butter and cream in a heatproof mixing bowl.
  • Melt gently. Heat the mixture in short microwave bursts, stirring between each one, or melt it gently over low heat until the chocolate is soft and melted.

  • Stir until smooth. Stir gently until the chocolate mixture is completely smooth and glossy.
  • Chill to firm up. Chill until so thick you can scoop and roll the mixture gently.

  • Scoop and shape. Portion using a small cookie scoop or spoon, then roll into balls with your hands.

  • Coat the truffles. Dust in cocoa powder or desiccated coconut until coated all over.

  • Chill again (optional). It looks very neat if you refrigerate it for 10–15 minutes before serving.

  • Stirring too aggressively before the chocolate has softened.
  • Not chilling the ganache until it is firm enough to scoop and roll.
  • Handling the truffles for too long while shaping them, which can soften the mixture.
  • Skipping the coating after shaping the truffles.
  • Not chilling the cocoa-coated truffles briefly before adding a second light coating for a cleaner finish.
