Quick-seared in butter and oil, gently simmered with garlic, and finished with a glossy pan sauce, crispy garlic chicken thighs are so easy and quick to prepare. They’re ready quickly and taste like a restaurant-style skillet dinner.

This is my favored skillet chicken when I want something savory, buttery, and heavy on the garlic but don’t want to create a dressing. Sear first for flavor, then briefly cover so the poultry remains juicy. However, the sauce you get at the conclusion is the most delectable. It grabs all the browned pieces, condenses down into a shiny spoon-over-the-top glaze, and adds a special touch to the entire meal.

Ingredients

Chicken and seasoning

  • 600 g of chicken thighs
  • 1 tsp salt
  • 1/2 tsp pepper (since you wrote “1 2 tsp,” I treat this as 1/2 tsp)
  • 1 tsp garlic powder

  • 2 tbsp vegetable oil
  • 25 g of unsalted butter
  • 2 mashed or minced garlic cloves

Ingredient Notes & Substitutions

Chicken thighs, The quickest to cook are boneless/skinless. If you’re using bone-in, cooking will be longer and ensure using a thermometer.

Vegetable oil, You’ll need some neutral oil (canola, avocado, grapeseed).

Butter, It will add flavor and help the sauce gloss up. Use more oil if you are aiming for dairy-free but do remember that it won’t be as flavorful as a butter sauce.

Garlic, fresh garlic is the most aromatic. If you simply don’t have one, you can always use garlic powder and increase the amount to 1/4 more tsp and skip the fresh garlic in the seasoning.

How to Make (steps 1–8)

1) Season chicken

Season chicken. dry chicken thighs. Sprinkle both sides of the chicken thighs with salt, pepper, and garlic powder.

2) Heat a pan

Then, bring a large pan to medium high heat. 3Stir in the veg oil and butter, it should melt.

3) Sear

Then, lay the chicken thighs down side down top to sear and leave them face down for 3-5 minutes.

4) Add garlic + water

Now, add the fresh minced garlic and water.

5) Cover and simmer

Then reduce the heat to medium and cover the skillet. When chicken is no longer pink inside (about 8-12 minutes depending on thickness), it’s done.

6) Finish the sauce

Then remove the lid and allow the liquid to reduce for 1-3 minutes while stirring in that delicious pan sauce to coat chicken.

7) Check doneness and serve

Chicken needs to be at 165* F in the thickest part. Serve with pan sauce. Garnish if you want.

Expert Tips

  • Dry chicken = better brown. Crisper edges are created by patting them dry.
  • Do not overcrowd the pan, If you’re using a small skillet, work in batches. So that the chicken browns as much as it steams.
  • Start high, Is reduced from High enough for color, then, lower for cooking through.
  • Add water slowly. Pour by the edge of pan to prevent splashing hot fat.
  • Use a thermometer. How to Keep Chicken Thighs Moist The quickest and easiest way to ensure juicy thighs without a lot of guesswork.
  • Reduce at the end. That one final minute of simmering is what makes the sauce look glossy and rich.

Storage & Freezing

Refrigerator: Transfer cooled chicken and sauce to an airtight container and store for up to 4 days.

Freeze: In a resealable container, in the freezer for up to 2 months.

To defrost: Defrost the burritos overnight in the refrigerator.

Reheating: Reheat, covered, in a skillet over medium-low with a little water to help swirl any stuck sauce from the pan, or microwave in short blasts.

Variations

  • Lemon-garlic finish: Squeeze lemon over top (to brighten the butter sauce).
  • Spicy version: Add a dash of cayenne or chili flakes to the seasoning.
  • Herb-butter: At the end, plop in a bit of chopped parsley (if you like).
  • Honey Garlic version: While you simmer the sauce, add in 1 – 2 tsp honey.
  • Creamy pan sauce: Whisk in 1-2 tbsp of heavy cream after removing from the heat (IF YOU WANT CREAMY).
