This Caramel Popcorn Recipe makes crisp, glossy popcorn coated in a quick homemade caramel that hardens as it cools. Everything is made on the stovetop, so there is no oven-baking step and no complicated candy equipment required.

There is a very specific moment with caramel popcorn where you tell yourself you are only testing one piece to make sure the coating has set.

This homemade caramel popcorn starts with freshly popped corn, then gets tossed with a hot buttery caramel while everything is still warm. Once spread out and cooled, the caramel firms into a thin, crisp shell with that sweet, crackly texture that makes caramel corn so difficult to stop eating.

How to Make Caramel Popcorn

  • Pop the popcorn.
In a large pot with a lid, heat 1 tablespoon oil (15 mL) over medium heat. Add the popcorn kernels (80 g) and cover. Shake the pot occasionally while the kernels pop. When the popping slows to 2–3 seconds between pops, remove from the heat and season with 1 teaspoon salt.

  • Make the caramel base.
In another saucepan (or the one you used and wiped dry), place sugar (150 g) and butter (30 g). Cook over medium heat, stirring frequently, until the sugar melts and is a deep amber caramel.
  • Add baking soda (carefully).
Remove the pot from heat. Add 1 tablespoon of baking soda, stir right away. The caramel will bubble immediately — and that’s ok.
  • When baking soda is stirred into hot caramel, the mixture foams and creates tiny bubbles. This makes the caramel lighter and helps create a thinner, crunchier candy coating around the popcorn. Serious Eats explains that baking soda creates this aerated structure in caramel coatings. Read more about why baking soda makes caramel lighter and crunchier.

Common Mistakes To Avoid

  • Cooking the caramel over very high heat, which can make it burn quickly.
  • Not stirring the popcorn well enough to coat every piece evenly.
  • Using too much caramel, which can make the popcorn sticky instead of crunchy.
  • Skipping the cooling step, which is what allows the caramel coating to set and become crisp.
  • Adding baking soda too late or not mixing it in quickly.
  • Using popcorn with too many unpopped kernels.
  • Storing the caramel popcorn before it has cooled completely.

FAQs

How long does caramel popcorn need to cool?

Let it cool at room temperature for 15–20 minutes, or until the caramel coating is crisp and fully set.

How do I keep the caramel from burning?

Cook it over medium heat, stirring often, and remove it from the heat as soon as it reaches a deep amber color.

Can I reduce the salt?

Yes. You can start with 1/2 teaspoon if you prefer a less salty caramel popcorn.

Is baking soda necessary?

It’s the step that creates the caramel foam and allows it to evenly coat everything. Without it, the coating is too thick and difficult to blend.

Can I use microwave popcorn?

For best results, use plain popcorn without heavy butter or added flavorings, since extra oils can affect how the caramel coats and sets.

Why is my caramel popcorn sticky instead of crunchy?

Make sure it is spread in a single layer and cooled completely before storing. Keep it in an airtight container once fully cool.

Notes

  • Work carefully: hot caramel can burn skin.
  • For a thinner, less foamy coating, try 1–2 tsp baking soda instead of 1 tbsp (optional variation).
  • Store airtight to keep it crunchy; humidity makes caramel popcorn soften.
