Ingredients
  

Cookie dough
  • 1 cup 225 g butter
  • 1 1/4 cups 150 g icing sugar
  • 2 tsp 10 mL vanilla extract
  • 1 large egg
  • 3 cups + 2 tbsp 375 g all-purpose flour
  • A pinch of salt
Filling
  • About 2/3 cup 160 g strawberry jam

  • Cookie scoop or tablespoon

  • Parchment paper
  • Teaspoon (for filling jam)

Method
 

  1. Preheat oven to 350°F (177°C). Line a cookie sheet with parchment paper.
  2. In a mixing bowl, beat the butter and icing sugar until smooth and fluffy.
  3. Mix in vanilla extract, then beat in the egg until fully combined.
  4. Add flour and a pinch of salt. Mix just until a soft dough forms.
  5. If needed, chill dough for 20–30 minutes for easier shaping.
  6. Roll dough into small balls and place on the cookie sheet. Press the center of each ball to make a well.
  7. Spoon strawberry jam into each center.
  8. Bake 10–12 minutes, until edges are lightly golden and jam looks set.
  9. Cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.
