Sautéed Green Beans with Garlic

Crisp-tender green beans are blanched, then quickly sautéed with olive oil, fresh garlic, salt, and black pepper for an easy vegetable side dish.

Ingredients
  

For the Green Beans:
  • 8 ounces fresh green beans trimmed (250 g)
  • 1 teaspoon salt for blanching water
For Sauteing:
  • 1 tablespoon extra virgin olive oil 15 ml
  • 2 garlic cloves finely minced, about 2 teaspoons
  • 1/8 teaspoon salt
  • 1 pinch black pepper

Equipment

  • Medium saucepan
  • Colander
  • Large skillet
  • Knife
  • Cutting board
  • Tongs or wooden spoon

Method
 

  1. Bring a medium saucepan of water to a boil. Add 1 teaspoon salt.
  2. Add the trimmed green beans and blanch for 4 minutes, until bright green and barely tender.
  3. Drain the beans and rinse briefly under cold water. Shake off as much water as possible.
  4. Heat olive oil in a large skillet over medium heat.
  5. Add the minced garlic and cook for 20 to 30 seconds, until fragrant and lightly golden.
  6. Add the blanched green beans, 1/8 teaspoon salt, and black pepper.
  7. Toss for about 2 minutes, until the beans are hot and coated in garlic oil.
  8. Serve immediately.

Notes

  • Use fresh garlic chopped with a knife rather than garlic paste or a garlic press.
  • Blanch the beans ahead of time, dry them well, and refrigerate until ready to sauté.
  • For garlic butter green beans, replace the olive oil with butter.
