Method
- Bring a medium saucepan of water to a boil. Add 1 teaspoon salt.
- Add the trimmed green beans and blanch for 4 minutes, until bright green and barely tender.
- Drain the beans and rinse briefly under cold water. Shake off as much water as possible.
- Heat olive oil in a large skillet over medium heat.
- Add the minced garlic and cook for 20 to 30 seconds, until fragrant and lightly golden.
- Add the blanched green beans, 1/8 teaspoon salt, and black pepper.
- Toss for about 2 minutes, until the beans are hot and coated in garlic oil.
- Serve immediately.

Notes
- Use fresh garlic chopped with a knife rather than garlic paste or a garlic press.
- Blanch the beans ahead of time, dry them well, and refrigerate until ready to sauté.
- For garlic butter green beans, replace the olive oil with butter.
