Ingredients
  

Vegetables + seasoning
  • 1.4 lb baby potatoes halved (700 g)
  • 2 red onions each cut into 8 wedges
  • 3 carrots peeled and cut into 2-inch pieces (5 cm)
  • 2 garlic cloves minced
  • Salt to taste
  • Black pepper to taste
  • 2 tsp dried thyme
  • 1 tsp dried oregano
  • 2 tbsp olive oil 30 mL
Sausages
  • 8 –10 sausages 1–1.4 lb / 500–700 g
Broth sauce
  • 2 tbsp melted butter 30 g
  • 2 1/2 tbsp all-purpose flour about 20 g
  • 2 cups + 2 tbsp beef broth 500 mL

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Prep potatoes, onions, carrots, and garlic.
  3. In a large bowl, toss potatoes, onions, carrots, and garlic with salt, pepper, dried thyme, dried oregano, and olive oil.
  4. Add sausages and toss to coat lightly.
  5. In a bowl, whisk melted butter and flour until smooth. Slowly whisk in beef broth until smooth.
  6. Transfer vegetables and sausages to a 9x13-inch baking dish. Pour the broth sauce over everything.
  7. Bake 40–50 minutes, turning sausages halfway through, until potatoes are tender and sausages are browned and cooked through.
  8. Rest 5 minutes, then serve with spoonfuls of the pan sauce.

Notes

  • Cut potatoes smaller if they’re not true baby potatoes so they cook on time.
  • Chicken or turkey sausages work great; watch cook time if they’re smaller.
  • If the dish looks dry near the end, add a small splash of broth and stir.
  • For extra browning, broil 1–2 minutes at the end (watch closely).
