Potato Salad

Potato Salad is a creamy and fresh side dish made with tender potatoes, radishes, onion, pickles, parsley, mayo, Greek yogurt, mustard, and vinegar. Serve it chilled for BBQs, picnics, potlucks, or family dinners.

Ingredients
  

For the Salad
  • 2 pounds potatoes boiled, peeled, and cut into bite-size chunks
  • 1 cup thinly sliced radishes
  • 1 red onion chopped
  • 1/2 cup dill pickles chopped
For the Dressing
  • 3 tablespoons fresh parsley finely chopped
  • 1/2 cup vegan mayo or regular mayo
  • 1/2 cup Greek yogurt or non-dairy yogurt
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon apple cider vinegar to sprinkle on the potatoes
  • 1 tablespoon mustard
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
Garnish
  • 1/2 teaspoon smoked paprika optional

Method
 

  1. Place the potatoes in a large pot and cover with cold water.
  2. Bring to a boil and cook until the potatoes are tender when pierced with a fork.
  3. Drain the potatoes and let them cool slightly.
  4. Peel the potatoes if needed, then cut into bite-size chunks.
  5. Sprinkle 1 tablespoon apple cider vinegar over the warm potatoes and let them sit for a few minutes.
  6. In a bowl, mix the mayo, Greek yogurt, mustard, 3 tablespoons apple cider vinegar, parsley, salt, and black pepper.
  7. Add the potatoes, radishes, red onion, and dill pickles to a large bowl.
  8. Pour the dressing over the potato mixture.
  9. Gently fold until everything is coated.
  10. Cover and chill for at least 30 minutes.
  11. Sprinkle with smoked paprika before serving, if desired.
