  • 3 eggs
  • 3 tbsp milk 50 ml
  • 1 tbsp + 1 tsp oil 20 ml
  • 1/2 tsp salt
  • 1/2 tsp red pepper crushed red pepper/red pepper flakes
  • 1 cup mozzarella cheese 100 g, shredded
  • Parsley chopped (to taste)
  • Toast bread slices from 1 loaf, sliced
  • Mozzarella cheese extra for topping

Method
 

  1. Finely chop the parsley.
  2. In a bowl, whisk eggs, milk, oil, salt, and red pepper.
  3. Stir in chopped parsley and shredded mozzarella.
  4. Slice the toast bread.
  5. Dip each bread slice into the egg mixture, flipping to coat.
  6. Arrange slices on a parchment-lined baking sheet and sprinkle extra mozzarella on top.
  7. Bake until the cheese is melted and golden. Serve hot.
