Ingredients
  

  • 2 tablespoon 30 ml Olive oil
  • 1 Onion chopped
  • 3 Garlic cloves
  • 1 can 14 oz / 400 g Tomato sauce
  • 2 tablespoons 30 g Tomato paste
  • Salt to taste
  • Pepper to taste
  • 1 teaspoon Oregano
  • Basil
  • cups 360 ml Water or vegetable stock or vegetable stock
  • 8 oz 225 g Pasta of your choice
  • Parmesan cheese for serving

Method
 

  1. Heat olive oil in a large deep skillet or pot over medium heat. Add chopped onion and cook until softened.
  2. Add garlic and tomato paste and stir briefly, then add tomato sauce and mix well.
  3. Pour in water (or vegetable stock). Season with oregano, salt, and pepper. Bring to a gentle simmer.
  4. Add pasta and cook at a steady simmer, stirring occasionally, until pasta is tender and sauce thickens. Add a splash more water if needed.
  5. Finish with basil and serve with Parmesan cheese
