No-Bake Vegan Chocolate Tart

A rich no-bake vegan chocolate tart with a chewy almond-date cocoa crust, thick coconut filling, and smooth dark chocolate coconut-cream topping.

Ingredients
  

Chocolate Almond Crust
  • 10.5 oz 300 g almonds
  • 8 oz 230 g Medjool dates, pitted
  • 3 tablespoons coconut oil
  • 2 tablespoons cocoa powder
  • 2 tablespoons maple syrup
  • Pinch of salt
Coconut Filling
  • 1 1/4 cups 300 ml coconut cream
  • 1/3 cup + 1 tablespoon 125 g maple syrup
  • 3 tablespoons coconut oil
  • 10.5 oz 300 g desiccated coconut
  • 2 teaspoons vanilla extract
Chocolate Topping
  • 8 oz 225 g dairy-free dark chocolate
  • 1 cup 240 ml coconut cream

Equipment

  • Food processor
  • Tart pan with removable bottom

Method
 

  1. Add the almonds, dates, coconut oil, cocoa powder, maple syrup, and salt to a food processor.
  2. Process until you have sticky chocolate crumbs that hold together when pressed.
  3. Press firmly and evenly into the base and sides of a tart pan.
  4. Refrigerate while preparing the filling.
  5. Gently warm the coconut cream and coconut oil for the filling until smooth.
  6. Pour over the desiccated coconut, then stir in the maple syrup and vanilla.
  7. Spread the coconut filling evenly over the chilled crust.
  8. Refrigerate until firm enough to support the chocolate topping.
  9. Gently melt the dark chocolate with the coconut cream and stir until smooth and glossy.
  10. Cool slightly, then pour over the coconut layer.
  11. Refrigerate until completely set.
  12. Decorate if desired and cut into slices with a clean, sharp knife.

  • If the dates are dry, soak them in warm water for 10 minutes, then drain well before blending.
