Lime Meltaway Cookies

Ingredients
  

  • - 2 1/4 cups 270 g all-purpose flour
  • - 2 tablespoons 15 g cornstarch
  • - 3/4 cup 170 g unsalted butter, softened
  • - 1/3 cup 40 g powdered sugar
  • - 2 tablespoons 30 g fresh lime juice
  • - Zest of 2 limes
  • - Generous pinch fleur de sel
  • - Liquid vanilla extract to taste
  • - 2/3 cup 80 g powdered sugar, for coating

  • Electric hand mixer or stand mixer
  • Rubber spatula

Method
 

  1. Beat the softened butter and 40 g powdered sugar for about 3 minutes, until creamy.
  2. Add the lime zest, lime juice, vanilla, and fleur de sel. Mix until combined.
  3. Whisk together the flour and cornstarch.
  4. Add the dry ingredients to the butter mixture and mix just until a soft dough forms.
  5. Shape the dough into a log about 1 1/2 inches (4 cm) in diameter.
  6. Wrap tightly and refrigerate for 1 hour, or until firm.
  7. Preheat the oven to 300°F (150°C) fan/convection and line a baking sheet with parchment.
  8. Slice the chilled log into rounds approximately 1/3 inch (8 mm) thick.
  9. Arrange on the prepared baking sheet.
  10. Bake for about 18 minutes, until set and only lightly golden.
  11. Let the cookies cool.
  12. Coat each cookie generously in the remaining 80 g powdered sugar.
