Preheat the oven to 400°F (204°C). Line a baking sheet with foil or parchment paper.
Scrub the russet potatoes well under cool running water.
Pat the potatoes completely dry with a clean kitchen towel.
Pierce each potato several times with a fork.
Rub the potatoes all over with olive oil.
Sprinkle the potatoes evenly with salt.
Place the potatoes on the prepared baking sheet.
Bake for 50–60 minutes, or until the potatoes are tender in the center. Very large potatoes may need 65–75 minutes.
Check for doneness by inserting a fork or knife into the center. It should slide in easily.
Let the potatoes rest for 5 minutes.
Slice open, fluff the inside with a fork, and add your favorite toppings.
