Ingredients
  

  • 2 lb carrots peeled and cut into bite-sized pieces, or baby carrots
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly cracked black pepper
  • 1/2 teaspoon garlic powder
  • Fresh parsley chopped, for garnish optional

Method
 

  1. Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Peel the carrots and cut them into bite-sized pieces.
  3. In a large bowl, mix honey, olive oil, salt, black pepper, and garlic powder.
  4. Add the carrots and toss until evenly coated.
  5. Spread the carrots on the baking sheet in a single layer.
  6. Roast for 25 to 35 minutes, flipping halfway through, until tender and lightly caramelized.
  7. Garnish with chopped parsley if desired and serve warm.

Notes

  • Cut the carrots evenly so they roast at the same speed.
