Preheat oven to 400°F (200°C). Line a cookie sheet with parchment paper if desired.
Cut potatoes into evenly sized wedges.
In a large bowl, mix olive oil, garlic, paprika, oregano, salt, and black pepper.
Add potato wedges and toss until fully coated.
Spread wedges on the cookie sheet in a single layer, leaving space between pieces.
Bake 20–25 minutes, flipping halfway, until golden and fork-tender.
Optional: sprinkle cheese over the wedges for the last 2–3 minutes, until melted.
Rest 2 minutes, then serve warm.
