Easy Lemon Cake (Super Moist) – With Sweet Lemon Glaze

Ingredients
  

For the lemon cake batter
  • 2 Tbsp granulated sugar 275 g
  • 1 tsp vegetable oil 165 ml
  • 1 Tbsp plain yogurt 250 g
  • Zest of 1 1/2 lemons
  • 1 tsp lemon juice 65 ml
  • 2 eggs
  • all-purpose flour 300 g
  • 4 tsp baking powder
  • Pinch of salt
For the lemon yogurt glaze
  • 1 3/4 cups powdered sugar 210 g
  • 1 Tbsp lemon juice
  • 1 1/2 Tbsp plain yogurt

Method
 

  1. In a large bowl, whisk sugar, yogurt, oil, eggs, lemon juice, and lemon zest until smooth.
  2. Add flour, baking powder, and salt. Mix just until combined.
  3. Pour batter into a greased round cake pan and smooth the top.
  4. Bake until golden and a toothpick inserted in the center comes out clean. Cool before glazing.
  5. Mix powdered sugar, lemon juice, and yogurt until glossy and pourable.
  6. Unmold the cooled cake and place on a serving plate.
  7. Pour glaze over the top and gently spread to the edges to create drips.

Notes

 
  • Don’t overmix after adding flour for the softest crumb.
  • If glaze is too thick, add lemon juice 1 tsp at a time. If too thin, add powdered sugar 1 Tbsp at a time.
  • Greek yogurt works, but thin it slightly for a smoother batter and glaze.
