Bruschetta Chicken

A fresh and easy Bruschetta Chicken recipe made with juicy seasoned chicken breasts, melted mozzarella, tomato garlic topping, basil, lemon juice, and Parmesan.

Ingredients
  

  • the Chicken
  • 4 tbsp extra-virgin olive oil
  • 1 lemon juiced, divided
  • Kosher salt to taste
  • Freshly ground black pepper to taste
  • 1 tsp Italian seasoning or dried oregano
  • 4 boneless skinless chicken breasts pounded to even thickness
  • 4 slices mozzarella

  • 3 slicing tomatoes chopped
  • 2 cloves garlic minced
  • 1 tbsp freshly chopped basil
  • For Serving
  • Freshly grated Parmesan for serving

Method
 

  1. In a large bowl, combine 3 tbsp olive oil, half of the lemon juice, salt, black pepper, and Italian seasoning.
  2. Add the chicken breasts and coat them well in the seasoning mixture.
  3. Heat the remaining 1 tbsp olive oil in a skillet over medium heat.
  4. Cook the chicken for 6–8 minutes per side, or until golden and cooked through to 165°F (74°C).
  5. While the chicken cooks, mix the chopped tomatoes, garlic, basil, remaining lemon juice, salt, and black pepper in a bowl.
  6. Place one slice of mozzarella over each chicken breast.
  7. Cover the skillet and cook for 2–3 minutes, or until the mozzarella melts.
  8. Transfer the chicken to a serving plate.
  9. Spoon the tomato topping over the chicken.
  10. Finish with freshly grated Parmesan and serve warm.
