Ingredients
  

  • - 1 lb steamed broccoli florets 454 g
  • - 2 jumbo eggs
  • - 1/2 cup shredded Parmesan cheese
  • - 4 tablespoons all-purpose flour
  • - 1 garlic clove minced
  • - Salt to taste
  • - Freshly ground black pepper to taste
  • - Vegetable oil for frying

  • Large mixing bowl

Method
 

  1. Steam the broccoli florets until tender enough to mash.
  2. Drain the broccoli thoroughly and transfer it to a large mixing bowl.
  3. Mash into small pieces using a potato masher or fork.
  4. Add the eggs, Parmesan cheese, flour, minced garlic, salt, and black pepper.
  5. Mix until evenly combined.
  6. Heat vegetable oil in a large skillet.
  7. Spoon portions of the broccoli mixture into the skillet and gently flatten into round fritters.
  8. Cook until the first side develops a deep golden crust.
  9. Carefully flip and cook until the second side is golden and the fritter is cooked through.
  10. Transfer to a wire rack or paper towel-lined plate.
  11. Serve warm.
