Soft brioche-style buns filled with chocolate spread, baked until golden, and dusted with powdered sugar.

Ingredients
  

  • 1 1/2 cups 340 ml milk
  • 1 tbsp 10 g yeast
  • 6 tbsp + 1 tsp 80 g sugar
  • 1 tbsp 12 g vanilla sugar
  • 3 1/2 tbsp 50 g oil
  • 1 egg
  • 2 tsp 12 g salt
  • 4 cups + 2 tbsp 500 g all-purpose flour
  • 1 tbsp 14 g baking powder
  • 2 tbsp 30 g butter
  • about 1/3 cup 100 g chocolate spread
  • 1 egg yolk for brushing
  • powdered sugar for dusting

Method
 

  1. In a bowl, mix milk, yeast, sugar, and vanilla sugar. Whisk and let sit until slightly foamy.
  2. Whisk in the egg, oil, and salt.
  3. Add flour and baking powder, then mix until a soft dough forms.
  4. Add butter and knead until smoother and elastic.
  5. Cover and let rise until puffy and expanded.
  6. Turn out the dough, deflate gently, and divide into equal portions.
  7. Flatten each portion, add chocolate spread in the center, seal tightly, and roll into a smooth ball.
  8. Place on a parchment-lined baking sheet and let rise again until puffy.
  9. Brush tops with egg yolk and bake until deep golden brown.
  10. Cool slightly, dust with powdered sugar, and serve.

Notes

  • If the dough feels sticky, oil your hands instead of adding lots of flour.
  • Seal the buns well so the filling doesn’t leak during baking.
  • Vanilla sugar can be replaced with 1 tsp vanilla extract (mix into the wet ingredients).
  • For best texture, rewarm leftovers before serving.
