Ingredients
  

  • 2 Eggs
  • 1 Flour tortilla
  • Salt to taste
  • Pepper to taste
  • Cheese of your choice
  • Pastrami/Ham
  • Green onion
  • Spinach
  • 1 tablespoon Oil

  • Whisk or fork
  • Nonstick skillet
  • Spatula

Method
 

  1. Crack the eggs into a bowl and season with salt and pepper.
  2. Whisk until smooth and fully combined.
  3. Heat the oil in a nonstick skillet over medium heat.
  4. Pour in the eggs and cook until they begin to set.
  5. Add the cheese, pastrami or ham, green onion, and spinach on top.
  6. Let the cheese begin to melt and the spinach soften slightly.
  7. Place the flour tortilla over the egg mixture.
  8. Carefully flip so the tortilla is underneath and the egg mixture is on top.
  9. Fold or roll into a burrito shape.
  10. Cook briefly until the tortilla is golden and lightly crisp.
  11. Slice and serve warm.
