Method
- Slice the banana into small pieces (save a few slices for decoration).
- In a mixing bowl, combine chia seeds, milk, heavy cream, vanilla extract, and lemon honey. Whisk until fully mixed.
- Stir in the chopped banana.
- Cover and refrigerate for at least 2 hours (or overnight) until thick.
- Stir well after chilling to remove any clumps. If it’s too thick, add a small splash of milk.
- Spoon into serving glasses and decorate with banana slices and sliced pistachios. Serve cold.

Notes
- Milk choice (Assumption): whole milk makes it creamier; 2% or plant milk also works.
- No heavy cream? Replace with the same amount of milk for a lighter texture.
- If you don’t have lemon honey, use regular honey plus a pinch of lemon zest.
- For best texture, stir once after 10–15 minutes of chilling, then chill fully.
