These Crispy Sweet Corn Fritters are packed with fresh corn kernels and crumbled feta, with a light cayenne kick and a golden, crunchy exterior. A combination of all-purpose flour and rice flour gives the fritter batter structure while keeping the fried edges crisp.

They come together in one bowl, then spoon straight into hot oil and fry until deeply golden on both sides. Inside, the corn stays juicy and sweet while the feta adds little salty pockets throughout.

Crispy Outside, Sweet and Cheesy Inside. I love a fritter that doesn’t hide the main ingredient. Here, you can actually see all those sweet corn kernels packed into every bite.

The batter is thick enough to hold everything together, but it isn’t supposed to turn these into heavy doughy pancakes. Rice flour helps keep the outside crisp, feta adds salty richness, and just a little cayenne gives the fritters warmth without covering up the corn.

They’re especially good served fresh while the edges are still crunchy.

If you have extra corn, use it in my Corn Salsa or make this fresh Grilled Corn Salad for another summer side. For dipping, my Chuy’s Creamy Jalapeño Ranch would be a great cool contrast, and a glass of Cucumber Lemonade keeps the whole meal fresh and summery.

How to Make Crispy Sweet Corn Fritters

  • Prepare the Corn and Batter

Remove the husks and silk from the corn, then carefully slice the kernels from the cobs. You should have about 2½–3 cups of corn kernels.

Add the corn to a large mixing bowl along with the all-purpose flour, rice flour, baking powder, salt, black pepper, cayenne, crumbled feta, beaten egg, and ½ cup milk.

Combine the corn, flours, feta, egg, seasonings, and milk in a large bowl.

Stir until evenly combined. The batter should be thick, moist, and scoopable, with plenty of visible corn kernels.

If needed, add a little of the reserved milk gradually. Avoid adding too much—the batter should hold its shape on a spoon rather than pour like pancake batter.

Mix until you have a thick, scoopable corn fritter batter.

  • Heat the Oil

Pour the neutral oil into a deep, heavy skillet and heat it to your tested frying temperature.

Before frying the full batch, cook one small test fritter. This helps you check the batter consistency, seasoning, browning, and oil temperature.

If the fritter browns too quickly while the center stays wet, lower the heat. If it barely sizzles and absorbs too much oil, the oil needs to be hotter.

  • Scoop and Fry the Fritters

Carefully scoop portions of batter into the hot oil, working in small batches. Lower the batter gently rather than dropping it from high above the skillet.

Flatten each portion slightly if needed so the centers cook evenly.

Scoop the thick corn batter into the hot oil in small batches.

Fry until the first side is deeply golden and firm enough to turn, then flip carefully and continue cooking until both sides are crisp and evenly browned.

Fry the corn fritters until crisp and deep golden on both sides.

Avoid overcrowding the skillet, which can lower the oil temperature and make the fritters greasy instead of crisp.

  • Drain

Remove the cooked fritters with a slotted spoon or metal spider and let the excess oil drip away.

Transfer them to a paper-towel-lined plate or wire rack while you finish frying the remaining batter.

  • Serve

Serve the sweet corn fritters immediately while they’re still hot, crisp, and golden.

What to Serve with Sweet Corn Fritters

These sweet corn fritters are rich, crispy, and slightly salty from the feta, so I like serving them with something cool, fresh, or tangy to balance the fried crust.

  • Creamy yogurt dip: Mix plain Greek yogurt with lemon juice, garlic, and fresh herbs. USDA MyPlate also recommends yogurt mixed with lemon and herbs as a quick dip. USDA MyPlate yogurt dip ideas
  • Fresh tomato salsa: The acidity and freshness are especially good with hot corn fritters. Try a tomato, onion, lime, and cilantro-style salsa; USDA MyPlate has a simple fresh version you can use for inspiration. USDA MyPlate Fresh Tomato Salsa
  • Avocado or guacamole: Creamy avocado works really well against the crisp fried edges and cayenne.
  • Simple green salad: A lightly dressed cucumber, tomato, or leafy salad turns the fritters into an easy lunch.
  • Grilled chicken or fish: Serve 2–3 fritters as a side with a simple grilled protein for a more complete dinner.

For the prettiest appetizer plate, serve the fritters hot with a cool yogurt sauce, lime wedges, and a little extra crumbled feta on top.

Why Use Rice Flour in Corn Fritters

The batter uses both:

All-purpose flour for structure.

Rice flour for a lighter, crisper fried exterior.

Using only wheat flour would give you a somewhat different texture.

Here, the combination works especially well because the fritters contain a lot of juicy corn and feta.

How to Keep Corn Fritters Crispy

  • Keep the Batter Thick

Don’t automatically add the reserved milk.

  • Heat the Oil Properly

Oil that isn’t hot enough allows the fritters to absorb more oil before the exterior sets.

  • Fry in Small Batches

Don’t fill every empty inch of the skillet.

  • Don’t Flip Too Early

Wait until the first side has formed a firm golden crust.

  • Drain Immediately

Move the fritters out of excess oil as soon as they’re cooked.

  • Serve Fresh

Like most fried foods, the texture is best shortly after frying.

I would keep fresh corn in the main recipe unless you’ve separately tested frozen corn and recorded whether it needs draining or drying first.

Your supplied ingredient list mentions Cotija or feta, while the photographed version clearly uses feta.
If you’ve tested Cotija too, it can be added as a tested variation. Otherwise, publish feta as the main cheese.
